From the security point of view it is safe, dns is unencrypted so it can be monitored by the ISP and it can of course be monitored by Google, so there may be a privacy concern.

Using DOH with cloudflare is better because it avoids ISP monitoring, but then Cloudflare can monitor your DNS requests
Google is the biggest violator of privacy in the world and Google cooperates with all world governments so not only do they have a through profile on you, they will give that profile sand record of all your internet activity to any government employee that asks for it (even without a properly executed court order)
You should use CloudFlare DNS instead, they have been around for years providing industrial internet services so we know that they are completely trustworthy
CloudFlare DNS is 1.1.1.1
CloudFlare DNS is also faster that Google because CloudFlare has a bigger network
You can also get the CloudFlare iOS app which provides their encrypted DNS and it also has a free VPN that is trustworthy, their app is called 1.1.1.1 so its easy to remember
